These muffins are delicious and a great source of Omega3 and fiber.
Ingredients
- 1 1/2 cup Whole wheat flour
- 1 cup Bob's Red Mill Flaxseed Mill
- 1/2 cup Splenda Blend Brown Sugar
- 1 tsp baking soda
- 1 tsp baking powder
- 1/2 tsp salt
- 2 TBS cocoa
- 1 cup Ghiradelli Semi-sweet chocolate chips
- 1 whole egg
- 1 egg white
- 3/4 cup low-fat milk
- 1 tsp pure vanilla extract
Instructions
- Preheat oven to 350 degrees
- Coat muffin pan with Pam and set aside.
- In large mixing bowl blend together all dry ingredients (flour, Bob's Mill, Splenda brown sugar, baking soda, baking powder, salt, cocoa, and chocolate chips)
- In small bowl beat eggs, add milk and vanilla
- Stir liquid mixture into dry ingredients.
- Using a spoon fill muffin pan with mixture.
- Bake for 15-20 minutes or until muffins are cooked through.
