Skinny Chocolate, Chocolate Chip Muffins

These muffins are delicious and a great source of Omega3 and fiber.

Ingredients

  • 1 1/2 cup Whole wheat flour
  • 1 cup Bob's Red Mill Flaxseed Mill
  • 1/2 cup Splenda Blend Brown Sugar
  • 1 tsp baking soda
  • 1 tsp baking powder
  • 1/2 tsp salt
  • 2 TBS cocoa
  • 1 cup Ghiradelli Semi-sweet chocolate chips
  • 1 whole egg
  • 1 egg white
  • 3/4 cup low-fat milk
  • 1 tsp pure vanilla extract

Instructions

  1. Preheat oven to 350 degrees
  2. Coat muffin pan with Pam and set aside.
  3. In large mixing bowl blend together all dry ingredients (flour, Bob's Mill, Splenda brown sugar, baking soda, baking powder, salt, cocoa, and chocolate chips)
  4. In small bowl beat eggs, add milk and vanilla
  5. Stir liquid mixture into dry ingredients.
  6. Using a spoon fill muffin pan with mixture.
  7. Bake for 15-20 minutes or until muffins are cooked through.

Cooking time and calories will vary depending on your oven and type of ingredients you use.
